Protein Peanut Butter Cups…

Protein Packed Peanut butter Cups

Equipment

  • 12 silicone cupcake molds not essential; but makes things easier 😉

Ingredients
  

  • 3/4 cup Peanut butter
  • 4 tbsp protein powder plant based
  • 2 tbsp maple syrup This can be omitted/depends on your sweet tooth.
  • 5 oz semi sweet chocolate I used the Enjoy Life brand. 100% real chocolate non GMO.
  • 1 1/2 tbsp coconut oil

Instructions
 

  • 1. In the microwave or double boiler on stove top, combine chocolate and coconut oil. If microwaving stir at 30 second intervals.
  • 2. Spoon a scant tbsp of melted chocolate into the bottom of each mold and place in the fridge or freezer while you make combine the filling.
  • 3. In a bowl combine peanut butter, maple syrup and protein powder.
  • 4. If your chocolate molds are set, press a tablespoon of filling into each mold. I used a small bottomed glass to press the filling flat in the mold.
  • 5. Warm the remaining chocolate and spoon a 1/2 tbsp of chocolate over each filling.
  • 6. Place the completed cups in the freezer until set.
  • 7. Store in an airtight container in the fridge until they are gone. Which won't take long. 😉
