Zucchini & Cheese Patties

Lot's of protein in these; tasty and satisfying!

Ingredients
  

  • 2 medium zucchini coarsely shredded
  • 1/4 cup cottage cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp Feta cheese crumbled
  • 3 garlic cloves crushed
  • 3 scallions finely chopped
  • 2 eggs large
  • 3/4 cup flour of choice I used chickpea (higher in protein than wheat flour.
  • 1 tsp each of salt and pepper
  • oil of choice for frying I used avocado oil.

Method
 

  1. 1. Place shredded zucchini in an old tea towel and wring out as much liquid as possible.
  2. 2. In a large bowl combine the zucchini and all other ingredients and mix well.
  3. 3. Set up a baking sheet lined with paper towel to receive the fried patties.
  4. 4. Fry your patties until brown and set to drain on paper lined baking sheet.
  5. 5. Enjoy!!
