1. In the microwave or double boiler on stove top, combine chocolate and coconut oil. If microwaving stir at 30 second intervals.
2. Spoon a scant tbsp of melted chocolate into the bottom of each mold and place in the fridge or freezer while you make combine the filling.
3. In a bowl combine peanut butter, maple syrup and protein powder.
4. If your chocolate molds are set, press a tablespoon of filling into each mold. I used a small bottomed glass to press the filling flat in the mold.
5. Warm the remaining chocolate and spoon a 1/2 tbsp of chocolate over each filling.
6. Place the completed cups in the freezer until set.
7. Store in an airtight container in the fridge until they are gone. Which won't take long. 😉
