Zucchini & Cheese Patties
Lot's of protein in these; tasty and satisfying!
Ingredients
- 2 medium zucchini coarsely shredded
- 1/4 cup cottage cheese
- 1/4 cup Greek yogurt
- 2 tbsp Feta cheese crumbled
- 3 garlic cloves crushed
- 3 scallions finely chopped
- 2 eggs large
- 3/4 cup flour of choice I used chickpea (higher in protein than wheat flour.
- 1 tsp each of salt and pepper
- oil of choice for frying I used avocado oil.
Instructions
- 1. Place shredded zucchini in an old tea towel and wring out as much liquid as possible.
- 2. In a large bowl combine the zucchini and all other ingredients and mix well.
- 3. Set up a baking sheet lined with paper towel to receive the fried patties.
- 4. Fry your patties until brown and set to drain on paper lined baking sheet.
- 5. Enjoy!!
