Cottage Cheese/Broccoli Muffins

Broccoli/Cottage Cheese Muffins

Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/4 cup chickpea flour
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/4 cup milk I used almond milk
  • 1 cup finely chopped lightly steamed broccoli
  • 3/4 cup grated cheese cheddar I used Monterey Jack

Instructions
 

  • 1. Heat your oven to 400 degrees F.
  • 2. Line muffin tins with parchment paper.
  • 3. After steaming your broccoli, rinse in cold water and ring it out in a tea towel.
  • 4. Whisk together cottage cheese, eggs, and milk.
  • 5. Add the chickpea and almond flours and the baking powder. Just a note: I sifted these into the liquid just to ensure the baking powder and chickpea flour is well incorporated.
  • 6. Add 1/2 cup of grated cheese and the broccoli.
  • 7. Spoon into prepared muffin cups. Sprinkle the top with the remaining cheese.
  • 8. Set in the oven and bake for 25-30 minutes or until the tops are golden.
  • 9. Cool on a wire rack.
