3. After steaming your broccoli, rinse in cold water and ring it out in a tea towel.
4. Whisk together cottage cheese, eggs, and milk.
5. Add the chickpea and almond flours and the baking powder. Just a note: I sifted these into the liquid just to ensure the baking powder and chickpea flour is well incorporated.
6. Add 1/2 cup of grated cheese and the broccoli.
7. Spoon into prepared muffin cups. Sprinkle the top with the remaining cheese.
8. Set in the oven and bake for 25-30 minutes or until the tops are golden.
9. Cool on a wire rack.
