Cottage Cheese/Broccoli Muffins

Broccoli/Cottage Cheese Muffins

Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/4 cup chickpea flour
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/4 cup milk I used almond milk
  • 1 cup finely chopped lightly steamed broccoli
  • 3/4 cup grated cheese cheddar I used Monterey Jack

Method
 

  1. 1. Heat your oven to 400 degrees F.
  2. 2. Line muffin tins with parchment paper.
  3. 3. After steaming your broccoli, rinse in cold water and ring it out in a tea towel.
  4. 4. Whisk together cottage cheese, eggs, and milk.
  5. 5. Add the chickpea and almond flours and the baking powder. Just a note: I sifted these into the liquid just to ensure the baking powder and chickpea flour is well incorporated.
  6. 6. Add 1/2 cup of grated cheese and the broccoli.
  7. 7. Spoon into prepared muffin cups. Sprinkle the top with the remaining cheese.
  8. 8. Set in the oven and bake for 25-30 minutes or until the tops are golden.
  9. 9. Cool on a wire rack.
