Broccoli/Cottage Cheese Muffins
Ingredients
- 1 cup cottage cheese
- 4 large eggs
- 1/4 cup chickpea flour
- 1 1/2 cups almond flour
- 1 tsp baking powder
- 1/4 cup milk I used almond milk
- 1 cup finely chopped lightly steamed broccoli
- 3/4 cup grated cheese cheddar I used Monterey Jack
Instructions
- 1. Heat your oven to 400 degrees F.
- 2. Line muffin tins with parchment paper.
- 3. After steaming your broccoli, rinse in cold water and ring it out in a tea towel.
- 4. Whisk together cottage cheese, eggs, and milk.
- 5. Add the chickpea and almond flours and the baking powder. Just a note: I sifted these into the liquid just to ensure the baking powder and chickpea flour is well incorporated.
- 6. Add 1/2 cup of grated cheese and the broccoli.
- 7. Spoon into prepared muffin cups. Sprinkle the top with the remaining cheese.
- 8. Set in the oven and bake for 25-30 minutes or until the tops are golden.
- 9. Cool on a wire rack.
